The Fisherman model is a sportsman bushcraft knife. It's a nice, thin (5/64 inch thick) convex grind. This knife has pretty nice flexibility to it, somewhere between a boning knife and a fillet knife. A dedicated fillet knife might be thinner and more flexible, where this here would make a great general sportsman's knife.
We offer two flexibility options with the Fisherman. Medium has pretty good flex for filleting fish, but is a little more rigid for boning and miscellaneous camp chores. High flexibility has an even thinner blade, and is more of a dedicated fish filleting knife. Flexibility stated below.
